Blinis with Vendace Roe - Kalix löjrom
Ingredients:
12 g (0.42 ounces) dry yeast
3 dl (1 ¼ cups) milk
3 dl (1 ¼ cups) buckwheat or wheat flour
0.5 tsp salt
4 eggs
100 g (3.5 ounces) butter
How to make it:
Dissolve the yeast in 1/2 cup plus 2 tablespoons of lukewarm milk and add the flour. Stir in the egg yolk and salt, and let the batter rise for about 30 minutes. Add the remaining milk and cooled melted butter.
Beat the egg whites until stiff and fold them into the batter.
Fry the blinis in a small frying pan. Stack them as they finish cooking.
Serve them cold or hot, with sour cream, Kalix vendace roe, or the less expensive lumpfish roe.
