Hearty Meat and Vegetable Soup

Ingredients:

  • 800 g (1.7 pounds) beef chucks not tender meat

  • 4-5 tablespoons butter

  • 2 yellow onion

  • 2 teaspoon salt

  • 1 teaspoon black pepper

  • 3 bay leaf

  • 5 dl (2 cups) chicken broth (1 cube + water)

  • 3 parsley roots, cut into small pieces

  • 1 small turnip 200 g (7 ounces), cut into pieces

  • 3-4 carrots 100 g (3.5 ounces), cut into bite size pieces

  • ¼ celery 200g (7 ounces), cut into bite size pieces

  • ½ leak, finely chopped

  • A bunch of flat-leaf parsley

How to make it:

1.     Melt 2 tablespoons of butter in a pot and heat it until it stops sizzling and begins to brown. Add the cut beef and sauté until it is evenly and nicely browned. Add the onion and let it cook together for 1-2 minutes, until soft and golden.

2.     Add the chicken broth, salt, pepper, and bay leaves. Remember to stir. Let it come to a boil and reduce heat. Important to cook until the beef almost fall apart. Tough delicious meat might need 2 hours.

3.     Add the hard root vegetables carrots, turnips, celery, parsley roots and let it simmer for another 20 minutes. You can also include potatoes if you prefer.

4.     For the last 10 minutes add finely chopped leak.

5.     Stir in parsley at the very end and serve this delicious soup to your friends or family. Enjoy!
