Pumpkin and Squash Soup

Ingredients:

  • 1 kg (2 lbs) pumpkin

  • 500 g (1 lbs) squash

  • 3 carrots

  • 1 onion

  • 1 garlic clove

  • 5 dl (2 cups) water

  • ½ dl (2. fl.oz) olive oil (optional, for added flavor)

  • Pumpkin seeds for garnish

How to make it:

  1. Peel and deseed the various vegetables, then cut them into chunks.

  2. Place all the vegetables in a large pot and add the water. Let it simmer until soft.

  3. Use a stick blender to puree the mixture until smooth.

  4. For an extra layer of flavor, consider blending in extra virgin olive oil at the end.
