Pumpkin and Squash Soup
Ingredients:
1 kg (2 lbs) pumpkin
500 g (1 lbs) squash
3 carrots
1 onion
1 garlic clove
5 dl (2 cups) water
½ dl (2. fl.oz) olive oil (optional, for added flavor)
Pumpkin seeds for garnish
How to make it:
Peel and deseed the various vegetables, then cut them into chunks.
Place all the vegetables in a large pot and add the water. Let it simmer until soft.
Use a stick blender to puree the mixture until smooth.
For an extra layer of flavor, consider blending in extra virgin olive oil at the end.
