Scandinavian Fall Menu

  • Autumn Pie with Chantarelles

A perfect pie simply must feature the rich, buttery yellow chanterelle mushrooms. This golden gem from the forest promises an exquisite culinary delight with every bite.

  • Beef Stroganoff with Chantarelles

While Stroganoff may have its roots in Russia, it has also gained immense popularity in Sweden, where it is savored with either beef or sausage.

  • Hearty Meat and Vegetable Soup

A hearty soup is perfect in the Fall when you need some comfort food. It will warm both your mind and the kitchen. Enjoy!

In the charming house, the majority of meals are prepared on the grill, and during the appropriate season, slow-roasted dishes are created in a wood-fired oven in the kitchen. All dishes complemented by handpicked vegetables from the kitchen garden and mushrooms from the forest.

One favorite is the slow-roasted juicy chicken with root vegetables slowly cooked in the wood-fired oven for two hours.

It’s fun however to prepare the meals outdoor on the grill: ribeye steak, T-bone and various cuts of pork, chicken or lamb.

With a quality grill at your disposal, the menu possibilities become virtually boundless. Effective ventilation and a lid work in tandem to keep the heat and smoke from dissipating. The ability to finely control the heat allows for the exploration of diverse grilling techniques.

There is something special about fruits you pick in your own garden. It becomes even more enjoyable when you try fruits you've never heard of before. It might take a few years for the plants to yield, which is why it's important to prepare your quality fruits so you can enjoy them throughout the year. Now, it's just a matter of stocking up your pantry.

Scandinavian Fall Menu

  • Blinis with Kalix Vendace Roe - "Kalix Löjrom"

Small pancakes or blinis offer a versatile base for various toppings. While they traditionally pair with beluga caviar, this appetizer truly shines when adorned with the exquisite Kalix Löjrom from northern Sweden. Delight in this exceptional treat!

  • Artichokes with Dairy Butter

This is an excellent appetizer, and all I require to complement the freshly harvested artichokes from the kitchen garden is some genuine dairy butter.

  • Autumn Pumpkin and Squash Soup

This is my favorite soup. It's rich in natural flavors and simple to prepare, and it contains no dairy products.

Swedish Classics

  • Pickled Herring, Cured Egg Yolk and Hazel Nuts

Pickled herring adds a touch of tradition and flavor to various occasions in Sweden. It is a real classic, an ideal appetizer when paired with newly harvested potatoes. Moreover, it firmly secures its place as an essential culinary delight during Christmas, Easter, and Midsummer. Accompanied by the festive spirit and melodic tunes, enhanced by a shot of aquavit.

  • Swedish Meatballs with Mashed Potatoes and Lingonberry Jam

This traditional dish is also called “husmanskost” in Sweden, which means everyday food. The meatballs can be served with all kinds of potatoes, and instead of lingonberries you can enjoy them with pickled cucumber. I can still remember my Grandmother’s meatballs made with love.

  • Crayfish with a Tasty Cheese Pie

In Sweden, the tradition of consuming crayfish during the month of August holds a special place in the hearts of its people. Swedes eagerly partake in this culinary custom. Enjoy!
